Apple Chopped Salad W/ Hemp Seed Oil Vinaigrette

Does your diet include hemp?

Hemp is known as a ‘superfood’ which means the seeds of the plant offer maximum nutritional benefits for minimal calories.  While the seeds of the low-THC cannabis plant are incredibly good for us and high in nutritive value, research shows misconceptions cause Aussies to miss out, with more than a third of Aussie’s recently surveyed believing hemp foods can impair our state of mind (for the kids in the back, this is absolutely NOT the case). 

Hemp seeds are made up of over 30% protein, contain all the essential amino acids that the body needs but cannot make, are high in fibre, rich in essential fatty acids (omega-6 and omega-3) and minerals like potassium, phosphorus and magnesium with the bonus of having anti-inflammatory properties.

Time: 15 minutes

Serves: 4

Ingredients:

3 cups raw spinach
3 cups broccolini, cut into bite sized pieces
2 tbsp mint leaves
2 tbsp parsley leaves
3 apples of your choice, diced
½ cup dried cranberries
½ cup sunflower seeds, shelled
1 cup walnuts, chopped
1 cup pecans, whole
½ cup gorgonzola cheese, crumbled

ACV Vinaigrette
¼ cup apple cider vinegar
½ cup hemp oil
2 garlic cloves, microplaned minced
1 tbsp maple syrup
Salt & pepper

Method:

Let broccolini sit in boiling hot water for 3-5 minutes. Plunge into ice cold water.

In a large bowl mix together all the salad ingredients.

In a small bowl, whisk together all the vinaigrette ingredients.

Drizzle vinaigrette over the salad and toss.
